One adage I’ve always taken to heart is the notion that you can eat whatever you want as long as you make it.
I know the idea behind this is that most people are not likely to make a cake or cookies every night so, if they stick to this rule, they will not often consume dessert.
The problem is, I love to bake and will happily make a cake every night.
The other problem I face is a lack of self-control. If I make dessert, it will sit on the counter and I will have a bite here and there, until next thing I know, half of it is gone one day later.
I’ve recently found the solution to my dilemma…
How to satisfy my chocolate cravings on the daily, without going completely overboard.
My new favorite thing to make is a single serving of “chocolate bark”. I load a saucer or small plate (because, portion control) up with tasty ingredients that are low in sugar and high in fiber or other nutrients, such as:
- Unsweetened Coconut
- Almonds, Walnuts, or Pecans
- Sunflower Seeds
- Goji Berries
Then I mix in just enough dark chocolate chips to hold it all together when they are melted.
I do all of this on top of a small piece of parchment paper so it doesn’t stick to the plate and makes cleanup a breeze.
Just stick it in the microwave for 30 to 60 seconds so the chocolate melts.
Then mix it up and sprinkle pink Himalayan sea salt on top.
Finally let it sit in the freezer for 20 to 30 minutes. The waiting is the hardest part, but also helps with mindfulness so you don’t just gobble it all down.
You can use any mix-ins you like, just try to not add too many sugary things.
There are so many options and you have all the control, so this can easily be vegan, nut-free, gluten-free, and dairy-free.
